It's tofu, but not. "HYAKU-ICCHIN" is a result of searching for a new way to eat tofu. The rich and deep taste is a result of soaking in a secret soy sauce-based pickling sauce and then our unique aging process. The aged HYAKU-ICCHIN has a sticky texture and is sometimes compared to "Japanese-style cheese". Since all the ingredients are made from plants, there is no peculiarity, and the delicate yet appetizing rich flavor can be enjoyed according to your favorite liquor, from sweet to dry.
